easyWhy tonight. Sear pork, sauce with apple and mustard.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pork
- apple
- onion
- dijon
- butter
Good if you have them, fine if you do not: thyme.
Method
- Dry the chops, salt them, and sear hard on both sides. Take them out at 5 degrees under — they finish in the pan sauce.
- Apples and onion into the pork fat, cooked until the apple softens at the edges but still holds its shape.
- Dijon and a splash of stock or cider, scraping the base clean.
- Pork back in with its juices, butter off the heat, and never boil it after that or the sauce splits.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- pork
- The forgiving meat. Shoulder takes hours and rewards them, chops take minutes and punish you for one too many, and the fat is the flavor in both cases.
- apple
- Sweet, acidic and firm, which is a rare combination — it holds its shape in a hot pan and cuts through fat on a cold plate.
- onion
- The base under most of this library.
- dijon
- Sharpness and, more usefully, emulsifying power — a spoonful is what holds oil and vinegar together in a dressing that would otherwise split.
- butter
- Flavor and body in the same spoonful.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Shares dijon, onion, butter
Turkey skillet with mustard
Leftover turkey, pan sauce, bread or rice.
Shares onion, dijon, butter
Bratwurst skillet
Brown the sausages, jam the onions, potatoes in the fat. Mustard at the table is the sauce. Beer would be traditional; stock if the bottle is empty.
Shares pork, apple, onion
Pork apple cabbage
German pot. Apple keeps the cabbage from tasting only like sulfur. Bay, not caraway if the jar is empty.
Shares pork, dijon, onion
Mustard pot roast
German Senfbraten logic: mustard crust, onion, a little stock. Cream at the end if you want it round. Slice, don't shred.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
