Method
- Brown the pork hard on all sides, then onion in the same fat until genuinely dark.
- Stock and bay in, lid on, and a low oven for two hours minimum.
- Mustard goes in at the END, off the heat. Braised for two hours it loses all its bite and turns bitter.
- Cream after that, warmed only. Never boil it once the mustard and cream are in.
