Method
- Use kimchi that is genuinely old and sour. Fresh kimchi makes a thin, flat stew and this is what old kimchi is for.
- Fry the kimchi and pork together in sesame oil first, until the kimchi darkens and the pork catches.
- Include the brine from the jar. That liquid is seasoned, sour and free.
- Stock in, tofu in gently, gochujang stirred through, then a hard simmer. This is one stew that likes a rolling boil.
