Method
- Dredge the chops in seasoned flour and sear them hard, then take them out. That flour on the pan base becomes the gravy.
- Onion cooked long and soft in the fat — fifteen minutes, until it is nearly jam.
- Stock in slowly, scraping the base, and whisked so the flour thickens smoothly.
- Chops back in and braised gently for twenty minutes. Smothered means cooked in the gravy, not served with it.
