Method
- Pour off all but a few spoons of the fat from the roasting tin, keeping every brown bit stuck to the bottom.
- Flour into the fat on the heat, whisked, and cooked a full two minutes until it smells of toast.
- Stock in a little at a time, whisking through each addition. Everything stuck to the tin should dissolve into it.
- Simmer to a coating consistency, then strain. Salt at the very end, after reducing, and a splash of cider vinegar or wine to stop it tasting flat.
