What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- asparagus
- leek
- stock
- butter
Good if you have them, fine if you do not: lemon.
Method
- Snap the woody ends off but keep them — simmer them in the stock for ten minutes and strain them out. That is free flavor most people bin.
- Leek softened in butter without color, then the asparagus and stock.
- Cook it briefly. Eight minutes, not twenty — long-cooked asparagus goes khaki and tastes of canned peas.
- Blend and finish with lemon off the heat. The color is half the dish and both heat and time destroy it.

Why each of these is on the list
What the ingredients are actually doing
- asparagus
- Short season, short cook.
- leek
- The gentlest allium — sweet and silky when cooked slowly in fat.
- stock
- Body, not flavor — that is the part people get backwards.
- butter
- Flavor and body in the same spoonful.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Leek potato soup
Sweat, simmer, blend or don't.
Shares leek, butter
Leek scramble
Wash the leeks after slicing, never before — grit lives between the layers. Melt them slowly, because browned leek turns bitter.

Asparagus skillet eggs
Snap the woody ends. Eggs last.

Shrimp and asparagus
One pan, two timings. Asparagus in first and hard, shrimp for ninety seconds a side at the very end.
