Method
- Slice the leeks and wash them after slicing, in a bowl of water. Grit lives between the layers and will not rinse out of a whole leek.
- Butter, lid on, lowest heat, fifteen minutes. You want them melted and sweet, not browned — color here makes the soup taste scorched rather than gentle.
- Potato and stock just to cover. Too much liquid and you spend an hour boiling flavor back into it.
- Blend completely smooth or not at all — half-blended is the worst of both. Cream off the heat, and lemon or vinegar at the end, which almost nobody adds and everybody notices.
