Method

  1. Slice the leeks and wash them after slicing. Grit lives between the layers and will not rinse out of a whole leek.
  2. Butter, lid on, lowest heat, twenty minutes. You are melting them, not frying them, and browned leek is bitter.
  3. They should collapse to a soft tangle you could spread with a knife.
  4. Onto thick toast with goat cheese and thyme, then a grind of pepper. Salt at the end, once the leeks have reduced.
