- Butter the outside of the bread right to the edges. Dry corners are what people leave on the plate.
- Grate the cheese rather than slicing it. It melts in half the time, which means the bread does not have to burn while it waits.
- Moderate heat and patience. High heat gives you a dark sandwich with cold cheese inside, which is the classic failure and it is always the same cause.
- Flip once, press gently, then let it sit a minute out of the pan so the cheese sets enough to stay in when you cut it.
