Method
- Drain the tuna properly, pressed against the lid. Wet tuna makes a sandwich that falls apart in the pan.
- Mix with mayonnaise and something acid — lemon, pickle, mustard. Tuna and cheese together are rich and flat without it.
- Cheese on both slices with the tuna between, so it seals as it melts and nothing escapes into the pan.
- Butter the outside of the bread, not the pan, and go low and slow. High heat browns the bread before the cheese has moved.
