Method
- Squeeze the kimchi out and chop it, then fry it in the pan first until it darkens. Wet raw kimchi steams the sandwich open.
- Cheese on both slices with the kimchi between, so the cheese seals it.
- Butter the outside of the bread rather than the pan, and go medium-low. High heat browns before the cheese moves.
- Press it, and give it longer than feels necessary on each side. Scallion inside at the end if you want the fresh note back.
