easyWhy tonight. Anchovy mashed into soft butter an hour ahead if you can. Nobody will name it, everybody will finish it, and it costs about a pound.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- bread
- anchovies
- butter
- garlic
Good if you have them, fine if you do not: parsley.
Method
- Soft butter mashed with chopped anchovy and grated garlic on a board, until it is a single paste with no fillets left.
- Make it an hour ahead if you can. The butter takes on the anchovy and the raw garlic edge goes.
- Toast the bread properly crisp — this butter is soft and salty and needs something rigid under it.
- Butter it while hot so it melts in, then more black pepper and parsley. No extra salt anywhere.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- Pan sauceTurning what stuck to the pan into a sauce. Two minutes of work at the end of something you already cooked.watery · too salty · greasy · broken · bitter
- Bread doughDeveloping gluten and letting fermentation do the flavor, which is mostly a matter of time rather than effort.dense · flat · gummy inside · tore during shaping · over-proofed
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- bread
- Structure, thickener, and the reason a lot of these dishes stretch.
- anchovies
- They dissolve. Melted into hot oil at the start nothing tastes of fish — it tastes of depth, and the people who say they hate anchovies have almost always only met them whole on a pizza.
- butter
- Flavor and body in the same spoonful.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
