easyWhy tonight. Savory first. Honey only if you want sweet.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- bread
- garlic
- butter
- ricotta
Good if you have them, fine if you do not: honey.
Method
- Toast the bread and rub the hot surface with a cut clove of garlic. The heat does the work and it is quite different from chopped garlic.
- Beat the ricotta smooth with salt first, for thirty seconds, so it spreads rather than crumbles.
- Butter under the ricotta as a barrier, so the bread stays crisp.
- Honey and black pepper over the top. It is four ingredients and every one of them is doing something.

Why each of these is on the list
What the ingredients are actually doing
- bread
- Structure, thickener, and the reason a lot of these dishes stretch.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- butter
- Flavor and body in the same spoonful.
- ricotta
- Mild, milky and wet. Drain it if it is going into anything baked, season it hard if it is going on anything — unsalted ricotta tastes like nothing, which is why so many people think they dislike it.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Anchovy butter toast
Anchovy mashed into soft butter an hour ahead if you can. Nobody will name it, everybody will finish it, and it costs about a pound.

Cheesy garlic bread
The loaf that is going stale. Bake it buttered and open first, cheese only after, or the bread steams instead of crisping.

Garlic bread
The freezer loaf earns its keep. Butter, grated garlic, a hot pan or broiler. Parsley if it is still green.

Ricotta honey toast
Beat the ricotta smooth with salt first — thirty seconds turns it into a different ingredient. Zest for the aroma, black pepper for the surprise.
