easyWhy tonight. Fries, a pan gravy from stock and butter, cheese that melts. Curds would be right; cheddar is the drawer.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- potato
- cheddar
- stock
- butter
Good if you have them, fine if you do not: worcestershire.
Method
- Chips fried twice — low to cook through, high to crisp. One fry gives you soggy chips under gravy, which is the usual failure.
- Gravy made properly and kept genuinely hot. Lukewarm gravy will not melt the cheese.
- Cheese onto the hot chips first, gravy poured over the top so it melts them from above.
- Assembled at the last second and eaten immediately. It has about two minutes.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- potato
- Waxy holds its shape, floury falls apart, and almost every potato complaint is the wrong one for the job.
- cheddar
- Sharpness plus melt. Aged cheddar tastes like more and melts like less, so a dish that wants both usually wants a mix — grate it, do not slice it, and take the pan off the heat before it goes in.
- stock
- Body, not flavor — that is the part people get backwards.
- butter
- Flavor and body in the same spoonful.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Cheese-whipped potatoes
Mash pulled into ribbons with cheese. Gruyère or tomme would be right; cheddar stretches if you work it. Garlic. It should be elastic, not lumpy.

Leek potato soup
Sweat, simmer, blend or don't.

Potato, onion and cheese skillet
Polish dumplings without the folding factory: potato-cheese filling, a dough you can handle, browned butter and onion. Sour cream. Don't boil them to rags.

Grilled cheese
Freezer bread thaws in the pan. Butter the outside, moderate heat, flip once. The cheese should stretch, not leak out and burn.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
