Method
- Boil the potatoes whole and skin-on so they do not waterlog, then peel them hot and rice them.
- Back into the warm pan with butter, then the cheese in handfuls over low heat.
- Beat it hard with a wooden spoon and keep beating — three or four minutes — until it stretches in ribbons when you lift the spoon. That is the whole dish and it only arrives through effort.
- It has to be served immediately. Aligot that has sat for ten minutes is cheesy mash, which is fine and is not this.
