Method
- Asparagus into the hot pan first with a little oil, and left until it is blistered in places and still snaps.
- Shrimp in, dried and seasoned, in one layer. A minute a side.
- Garlic in at the very end, for thirty seconds, with the butter.
- Lemon off the heat, chili if you want it. Total cooking time under six minutes — everything about this dish goes wrong slowly and then all at once.
