Carcass if you have it; diced turkey if not.

easyWhy tonight. Carcass if you have it; diced turkey if not.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- turkey
- rice
- carrot
- onion
- stock
Good if you have them, fine if you do not: parsley.
Method
- Sweat the carrot and onion properly first, ten minutes, which is where the soup gets its body.
- Simmer the carcass or the stock with the aromatics before any turkey meat goes near it.
- Cook the rice separately if there will be leftovers. Rice left in broth overnight drinks all of it.
- Leftover turkey in at the very end, torn rather than cubed, and only to warm through.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- turkey
- Lean and huge, which is a bad combination for even cooking.
- rice
- Starch that either steams or fries, and the two want opposite things.
- carrot
- Sweetness that survives long cooking, which is why it sits under so many braises.
- onion
- The base under most of this library.
- stock
- Body, not flavor — that is the part people get backwards.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
