Method
- Rum, honey syrup and lime shaken hard, then topped with sparkling wine.
- Let the honey down with warm water first at three parts honey to one water, or it will not incorporate in a cold shaker.
- Shake everything except the wine, strain into a chilled glass, then top gently.
- Pour the sparkling wine slowly down the side. Poured straight in, it foams over and you lose half the drink.
