Method
- Dry the shrimp. Wet shrimp steam, and steamed shrimp are grey and squeaky.
- Butter, garlic thirty seconds only, then the shrimp in one layer. They take about ninety seconds a side and that is all.
- Shrimp out, wine in, reduced by half with the pan loud. Shrimp overcook faster than any sauce reduces.
- Off the heat, cold butter beaten in, shrimp back through, parsley and lemon. The residual heat finishes them.
