Method
- Shallot and garlic soft in butter without color. Browned aromatics make the broth taste bitter under the wine.
- Wine in, brought to a hard boil for a minute to cook the raw edge off before anything else goes in.
- Lid on, high heat, and shake the pan rather than stirring. Steam is doing the work and every lift of the lid costs a minute.
- Cold butter and parsley beaten into the broth at the end. The broth is the dish, so serve bread with it and mean it.
