Method
- Scrub them, pull the beards, and discard any that stay open when tapped.
- Shallot and garlic softened in butter in a wide pot, wine in, brought up hard.
- Mussels in, lid on, high heat. Shake the pot once. Three to four minutes and they are done.
- Lift them out and reduce the liquor a little before pouring it back — otherwise it is thin and full of the water they gave up. Parsley, bread, and no fork required.
