Method
- Roast the halves cut-side down first, on their own, until nearly soft. Stuffed from raw, the squash is hard when the filling burns.
- Cook the rice separately and season it properly. It is going into a sweet vegetable and it needs salt and acid of its own.
- Fill loosely rather than packing it. A tightly packed cavity steams and everything goes soft.
- Feta and dill over the top for the last ten minutes only, so the cheese softens rather than melting away.
