easyWhy tonight. Roast squash if you can. Blend.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- squash
- coconut milk
- onion
- ginger
Good if you have them, fine if you do not: lime.
Method
- Roast the squash rather than boiling it. Roasted squash makes a soup with depth; boiled squash makes a soup with volume.
- Onion and a lot of ginger softened in the pot, then the roasted squash and just enough stock to blend.
- Blend completely smooth, then coconut milk off the heat.
- Lime and salt at the end, and more lime than seems right. Sweet squash without acid reads as baby food.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- squash
- Sweet, starchy and full of water, which is why roasting beats boiling every time.
- coconut milk
- Fat that carries chili and spice further than water can, with a sweetness underneath.
- onion
- The base under most of this library.
- ginger
- Bright and hot when raw, mellow and warm when cooked.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
Cooks from the same box
If you bought for this, you can already make these
Shares squash, coconut milk, ginger
Ginataang squash
Squash in coconut, ginger, a few shrimp for salt. The squash should slump into the sauce. Don't make a Thai curry and skip the ginger-first bloom.
Shares coconut milk, onion, ginger
Lentil coconut stew
Everything from the cupboard except the ginger. Bloom the turmeric in fat, keep the coconut at a bare simmer, and lime at the end.
Shares onion, ginger
Beef rice bowl
Thin beef, sweet-salty onion. A raw egg yolk if you trust your eggs.
Shares coconut milk, ginger
Coconut fish curry
Gentle simmer. Fish in last so it flakes, not boils apart.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
