Method
- Onion, garlic and ginger soft first, then turmeric into the fat for thirty seconds — it burns fast and burnt turmeric is bitter for the whole pot.
- Lentils and water, cooked until they collapse. Red lentils go to purée and that is correct here.
- Coconut milk at the end and only warmed through. Boiled hard it splits into oil and grit.
- Lime and salt off the heat. It tastes flat and beige until the acid goes in, and then it does not.
