Method
- Cook the lentils in water with the turmeric first, until they collapse completely. Red lentils should go to purée.
- Make the tempering separately: hot oil, cumin, garlic and ginger fried until fragrant, then poured over the finished dal.
- That tempering is not optional and it is not the same as cooking the spices in the pot. Poured over at the end it stays loud.
- Coconut milk stirred in off the heat, lime last. Boiled coconut milk splits into oil and grit.
