Method
- Ginger softened first, then coconut milk brought to a bare simmer and reduced a few minutes before the fish arrives.
- The sauce needs longer than the fish does. Cooking them together overcooks one to build the other.
- Fish in off the boil for five minutes, and it carries on cooking in the hot sauce after the pan is off.
- Fish sauce and lime at the very end, off the heat. Both flatten if they simmer.
