What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chickpeas
- olive oil
- cumin
- paprika
Good if you have them, fine if you do not: lime.
Method
- Dry them hard, then oil and roast at 200C for thirty minutes until they rattle.
- Cumin and paprika tossed on when they come out of the oven, in the residual heat, so they toast without scorching.
- Ground spices roasted from the start go bitter long before the chickpeas are crisp.
- Lime over the top and eaten the same day. By morning they will have gone soft.

Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.

Why each of these is on the list
What the ingredients are actually doing
- chickpeas
- Nutty and sturdy, and they take on whatever they are cooked in rather than adding much of their own.
- olive oil
- Two ingredients sharing a name.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- paprika
- Color and a mild sweet pepper flavor, and it scorches into bitterness almost instantly.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
