Method
- Dry the chickpeas and blister them in hot oil until some split. Soft chickpeas make a soft, dull salad.
- Dress them warm, on their own, before the leaves are anywhere near.
- Arugula folded in only once the chickpeas have cooled, or it wilts to slime.
- Lemon twice — once in the dressing and once over the plate. Feta at the end.
