Method
- Drain and dry both. Wet chickpeas and wet tuna make a bowl that tastes diluted no matter how much lemon goes in.
- Dress the chickpeas alone first, warm if you can be bothered, with lemon, oil and salt. They take dressing in a way tuna does not.
- Tuna folded in last, in big flakes. Stirred hard it disappears into paste.
- Sliced raw onion or shallot soaked two minutes in the lemon juice before it goes in, which takes the burn off.
