Method
- Capers rinsed if they are salt-packed, drained if brined, then dried. Wet capers will not toast.
- Olive oil warm, capers in until they open and crisp slightly at the edges — under a minute.
- Off the heat, lemon juice in, which will spit, then swirled into the oil.
- Tuna flaked through warm rather than cooked in. It is already cooked, and a second cooking makes it chalk.
