Method
- Use the oil-packed tuna and use its oil in the pan. Water-packed tuna makes this dish dry and there is no fixing it later.
- Warm the tuna in olive oil with garlic just enough to take the fridge off it — thirty seconds, no more.
- Pasta and a splash of its water in, tossed until the oil and starch come together.
- Lemon, parsley and black pepper off the heat. No cheese: parmesan flattens tuna rather than lifting it.
