easyWhy tonight. Two tins and no heat. Dress the beans on their own first and crush a third of them, or the whole thing rolls off the toast.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- tuna
- white beans
- lemon
- olive oil
- bread
Good if you have them, fine if you do not: parsley.
Method
- Dress the beans on their own first, warm if possible, with lemon, oil and salt. Beans take dressing; tuna does not.
- Crush about a third of them with a fork so the mix holds on the toast instead of rolling off.
- Tuna folded in last in big flakes, oil-packed and its oil used.
- Thick toast, rubbed with garlic, and parsley over. More lemon at the table than you put in the bowl.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- tuna
- Canned in oil is a different ingredient from canned in water; the oil is flavor and should go into the dish, not the sink.
- white beans
- Creamy enough to thicken what they are in — mash a ladleful against the side of the pot and the whole dish gains body.
- lemon
- Acid you add at the end, not the start.
- olive oil
- Two ingredients sharing a name.
- bread
- Structure, thickener, and the reason a lot of these dishes stretch.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Caper lemon tuna
The can, capers, lemon, oil. It should taste briny and bright, not like cafeteria tuna.

Tuna chickpea salad
Two cans, no heat. Lemon and oil are the dressing. Onion if you want bite. It should be lunch, not a mush.

Anchovy egg toast
Hot toast, a melted anchovy, a jammy egg, lemon. Breakfast that tastes like a bar in Rome. Don't make it a Caesar on bread.
