Method
- Dry the chickpeas hard or they steam instead of blistering. A towel and two minutes.
- Cauliflower cut with flat faces so it touches the tray. Round florets sit on one point and never color.
- Cumin and oil, 220C, and left alone until there are properly dark edges. Pale cauliflower is a wasted tray.
- Yogurt thinned with lime as the sauce, spooned under rather than over so nothing goes soft.
