easyWhy tonight. Roast hard. Sauce is yogurt-lime.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- cauliflower
- tortillas
- lime
- cumin
- yogurt
Good if you have them, fine if you do not: cilantro.
Method
- Roast the cauliflower at 220C in oil and cumin until there are genuinely dark, almost-burnt edges. Pale cauliflower makes a dull taco.
- Cut it so there are flat faces. Round florets touch the tray at one point and never color properly.
- Yogurt thinned with lime and salt as the sauce, spooned onto the tortilla before the filling.
- Char the tortillas dry over a flame. Lime and cilantro at the table, not in the kitchen.

Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.

The technique underneath this
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- cauliflower
- Bland when boiled, excellent when browned.
- tortillas
- They want direct heat before they go anywhere near a plate.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- yogurt
- Acid and creaminess together, which is why it works as a sauce with no cooking at all.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
