Method
- The batter should coat thinly and cling, not envelop. Thick batter fries to a doughy shell around raw cauliflower.
- Cut the florets small — big ones are raw inside by the time the coating is dark.
- Oil at 175C and no crowding. Cold oil is what makes pakora greasy rather than crisp.
- Drain standing on a rack. Yogurt and lemon to serve.
