Method
- Dry the shrimp on a towel. Wet shrimp in a hot pan boil, and boiled shrimp in fried rice go rubbery.
- Shrimp cook in about ninety seconds. Sear them first, take them out, and put them back at the very end.
- Cold rice into the hot pan, spread and left to catch, then turned. Constant stirring makes it soft.
- Soy sauce around the edge, eggs and scallion through, shrimp back on top. Everything past the rice is a thirty-second job.
