Method
- Cold rice only, ideally a day old. Fresh rice is too wet and you get a pan of porridge with soy sauce in it.
- Scramble the eggs first, on their own, and take them out while they are still loose. They will finish later.
- Chicken next in a very hot pan, then the rice, pressed flat and left long enough to catch and crisp before you turn it.
- Soy sauce down the hot side of the pan rather than onto the rice, then eggs and scallion back in at the very end.
