Method
- Blanch the spinach thirty seconds and shock it in cold water, then squeeze it dry in your hands.
- That squeeze is the whole technique. Unsqueezed spinach makes a watery, diluted side.
- Dress it cold with sesame oil, soy and garlic, separating the squeezed clump with your fingers.
- Toasted sesame seeds crushed slightly so they release their oil. Served at room temperature.
