Method
- Toast the nori for two seconds over a flame. Untoasted it is limp and tastes of paper.
- Season the rice while it is hot with soy and a little sesame oil, folded rather than stirred.
- Toast the sesame seeds dry in a pan until they smell nutty — thirty seconds and they burn.
- Nori torn over at the table so it stays crisp. This is furikake logic and it takes four minutes.
