Method
- Brown the sausages whole first, then take them out and slice them. Sliced first, they lose their fat and go dry.
- Peppers and onions into the sausage fat, cooked long and slow until they collapse and sweeten. Twenty minutes, not five.
- Sausage back in at the end with oregano to finish through.
