Method
- Peppers and onion tossed in oil and given a fifteen-minute head start in a hot oven. They take far longer than the sausage.
- Sausages in after that, nestled among them, pricked nowhere — piercing them lets out the fat that is meant to season the vegetables.
- Do not stir. Everything wants a face against hot metal.
- Vinegar over the tray while it is still hot. It lifts the fat and it is the difference between dinner and a tray of brown things.
