- Aged rum, not white — there has to be barrel in it or the sugar has nothing to sit against.
- Demerara sugar if you have it, worked to a paste with two dashes of Angostura.
- 2 oz rum, ice, stirred, over one big cube.
- Orange peel and a grate of nutmeg. Rum and nutmeg is one of the oldest pairings in drinking and it still works.
