Method
- A sugar cube in the bottom of the glass, soaked with three or four dashes of Angostura until it is stained through.
- Cold sparkling wine poured slowly over it.
- The cube dissolves as you drink, so the last mouthful is sweeter than the first. That is the design, not a fault.
- Lemon peel expressed over the top. No stirring at any point — stirring costs you the bubbles and the cube.
