easyWhy tonight. Sugar and bitters against smoke, with an orange peel expressed hard over the top. Simpler than the Oaxaca and drier.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- mezcal
- sugar
- angostura
Good if you have them, fine if you do not: orange.
Method
- 1½ oz mezcal only — smoke is louder than any other base spirit and the usual two ounces is too much here.
- Agave syrup and two dashes of Angostura, stirred long.
- A flamed orange peel if you are willing: the caramelized oil sits directly on top of the smoke and it is the whole trick.
- Split it with reposado tequila if it reads as bonfire. Two-thirds tequila is still unmistakably smoky.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- mezcal
- Smoke over the same agave backbone, and it does not blend so much as lead.
- sugar
- Not just sweetness — it balances acid and bitterness, which is why a sour drink and a tomato sauce both want a little.
- angostura
- Bitters are seasoning for a drink — the salt of the bar.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Shares sugar, angostura
Champagne cocktail
A sugar cube soaked in bitters, then sparkling wine over it. The cube fizzes the whole time, which is half the pleasure.

Brandy Old Fashioned
Cognac, sugar and bitters. Wisconsin does it with soda and cherries; this is the austere version and it is better.
Shares sugar, angostura
Irish Old Fashioned
Irish whiskey is lighter than bourbon, so this wants less sugar and one dash fewer of bitters.

Oaxaca Old Fashioned
Mezcal, honey and bitters. Smoke and honey together are the reason this became a modern standard.
