What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chickpeas
- lemon
- olive oil
- onion
- oregano
Good if you have them, fine if you do not: bay leaf.
Method
- Onion softened in a lot of olive oil, then the chickpeas with plenty of water and the oregano.
- A long, slow oven or a bare simmer for two hours. This is a dish about time rather than technique.
- Crush a third against the pot near the end so it thickens itself.
- Lemon and more raw oil at the table, and it wants more of both than seems reasonable. Better the next day.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- chickpeas
- Nutty and sturdy, and they take on whatever they are cooked in rather than adding much of their own.
- lemon
- Acid you add at the end, not the start.
- olive oil
- Two ingredients sharing a name.
- onion
- The base under most of this library.
- oregano
- One of the few herbs that is stronger dried than fresh, and the dried version is what most of these dishes want.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Chickpea arugula salad
Dress the chickpeas on their own first, warm if you can. They take dressing in a way the leaves never will.

Tuna chickpea salad
Two cans, no heat. Lemon and oil are the dressing. Onion if you want bite. It should be lunch, not a mush.

Hummus
Better than the tub and about six minutes of work. Tahini and lemon carry it; the chickpeas are the body, not the flavor.

Warm hummus bowl
Hummus as dinner: warm chickpeas, a well of oil, something to scoop with.
