Method
- Warm hummus is a different dish from cold hummus and much better. Chickpeas warmed in their liquid before blending.
- Blend it much longer than feels necessary — a full three minutes. Smoothness comes from time, not from more oil.
- Ice water added while blending is the restaurant trick: it makes it pale and fluffy rather than dense.
- Cumin and paprika bloomed in hot oil and poured over the top at the end, with whole chickpeas kept back.
