Method
- Dry the chickpeas and get them in hot oil until some of them blister and split. Soft chickpeas make a soft dish.
- Sliced garlic in after, not before — it burns in the time chickpeas need to color.
- Kale in wet from washing, with a lid on for two minutes. The water on the leaves is the steam.
- Lid off, lemon and salt at the end. Kale takes more salt than a lettuce does and more acid than a spinach.
