Method
- Strip the stems and massage the kale with oil, lemon and salt until it darkens and halves in volume. A full minute of work.
- Dress the beans separately, warm if you can, and crush a third of them so the bowl holds together.
- Garlic grated into the dressing rather than chopped into the salad, so nobody bites into a piece of it.
- It is better after twenty minutes than it is right away, which makes it the rare salad worth packing for lunch.
