Method
- Farro in well-salted water like pasta, drained while it still has chew.
- Kale into the hot pan wet from washing with a lid for two minutes, then uncovered so the water cooks away.
- Beans with some of their liquid, a third crushed, so the bowl holds together rather than rolling apart.
- Dress the farro while warm. Lemon and parmesan at the end, and it is better the next day.
