Method
- Strip the stems, slice the leaves thin, and massage them with oil and salt until they darken and halve in volume.
- The dressing is anchovy mashed to a paste with garlic and salt, then lemon, then oil beaten in slowly.
- Anchovy is not optional and it will not taste of fish. It is the salt and the savory weight, and without it this is oiled kale.
- Dress it early. Unlike a lettuce Caesar, kale improves for twenty minutes in dressing rather than wilting into it.
